La cúrcuma es un condimento que proviene de la planta denominada Cúrcuma longa originaria del sudeste asiático. La especia se obtiene tradicionalmente por medio de la desecación de su rizoma. Además de ser una especia muy aromática, con unas propiedades organolépticas muy interesantes, a esta droga vegetal se le atribuyen un sinfín de propiedades medicinales.
De hecho, más allá de su característico color anaranjado y sabor amargo-picante, contiene compuestos fitoquímicos que son los que le confieren las propiedades medicinales.
Los curcuminoides son los principios activos más abundantes en el rizoma de esta planta. Entre ellos el más conocido es la curcumina, que contiene aceites esenciales como son el omega-9, omega-3 y aceites volátiles.
La cúrcuma aporta fibra, proteínas y es rica en hidratos de carbono. Contiene minerales como:
Hierro
Magnesio
Calcio
Fósforo
Potasio
Zinc
Contiene vitaminas como:
Alfa-tocoferol
Vitamina K
Vitaminas del complejo B: B1, B2, B3, B6, B9.
Las Propiedades y los Beneficios para la Salud
La cúrcuma es mucho más que un mero ingrediente de la cocina del sudeste asiático, como en la India. Nuestra gastronomía hindú incluye la cúrcuma como el ingrediente base en muchos de sus platos, hay que pensar que en la tradicional medicina ayurvédica, la misma comida en sí era una forma de medicina y de dichos ingredientes, ahora podemos conocer el valor terapéutico de los principios activos.
Gracias a sus principios activos esta especia protege frente a las agresiones derivadas de la síntesis de radicales libres, por medio del incremento del contenido de glutatión y de su actividad. Además, estimula la síntesis de glutatión sintasa y el CYP-450.
Actúa en las enfermedades inflamatorias, gracias a su capacidad para reducir la síntesis de prostaglandinas inflamatorias, demostrándose su eficacia en el tratamiento de la psoriasis y la artritis reumatoide, entre otras.
Gracias a su capacidad para inhibir la transcripción de moléculas importantes en el inicio de la inflamación, reduce los efectos inflamatorios en la mucosa gástrica. Además, incrementa la producción de las secreciones mucosas fundamentales para poder amortiguar las lesiones inducidas por los jugos gástricos.
Incluso en las enfermedades neurodegenerativas como el Alzheimer podría ser potencialmente beneficiosa, por los efectos inhibitorios que tiene sobre la formación de las placas de amiloides.
Tiene efectos hipolipemiantes, mejorando el perfil lipídico posiblemente por el incremento de la función hepática.
También, son muchos los estudios en los que se observa el efecto en la regulación de la inflamación en el desarrollo tumoral, incluso siendo capaz de reducir o ralentizar el crecimiento tumoral.
En definitiva, la mayoría de las propiedades de la cúrcuma son debidas a su efecto antioxidante y regulador de la inflamación. Por eso, se observa un abanico tan amplio de acciones sobre muy diversas dolencias.
Por lo general, podemos decir que el empleo de la cúrcuma como condimento, además de aportarnos ese sabor tan característico, tiene propiedades medicinales que nos obligan a tenerla en nuestro especiero.
Contraindicaciones de la Cúrcuma
Como toda sustancia química, la cúrcuma tiene contraindicaciones. Principalmente en personas con afecciones graves de la función hepática y coledocolitiasis.
Por lo general, debido a que no se conoce su efecto sobre la mujer gestante y el niño tampoco se recomienda su uso en estos casos.
Especial atención deben tener aquellas personas que estén tomando anticoagulantes, ya que el empleo de la cúrcuma puede potenciar el efecto anticoagulante del fármaco.
Para poder tomar curcuma de forma medicinal y aprovechar sus propiedades, lo importante es un buen asesoramiento. Las recomendaciones generales sobre el consumo de cúrcuma oscilan entre el gramo y los tres gramos de cúrcuma. En el caso de extracto de curcumina de alta concentración se debe emplear entre los 300-600mg. Pero la información es orientativa.
